This is my version of the 0 Point Vegetable Soup from the Weight Watchers booklet. We had leftovers tonight for dinner and it was just as good as the first night.
Italian Vegetable Soup
1 small bag baby spinach
4 medium carrots, chopped
4 medium celery ribs, chopped
8-10 mushrooms, chopped
1 large onion, chopped
2 large garlic cloves, minced
*8 cups water
*3 T. chicken Better than Bouillon
2 14 oz cans diced tomatoes
3 bay leaves
2T dried basil
1 t. dried oregano
Salt & pepper to taste
Cooked brown rice for serving
Place all ingredients in crockpot; cover and cook on high for 5 hours. Remove bay leaves, stir and serve.
If you don't want to use the crockpot, add all ingredients to a large soup pot. Bring to a boil and then reduce heat to low; simmer, partly covered, until vegetables are soft.
* You can use 8 cups of your favorite broth.
